The subdelegate of the Government in Lugo, Isabel Rodríguez, highlighted in the twenty-eighth edition of the San Simón de Vilalba Cheese Fair “the maintenance of the traditional trade, which allows the unlimited projection of this emblematic product of the Chaira, economic and gastronomic engine essential for the city council and the province”. The subdelegate attended, together with the mayor, Marta Ronco, and the municipal corporation, the proclamation made by the actor Sergio Pazos, congratulating the municipal government, the Association of Queixeiros and the Regulatory Council of the PDO San Simón de la Costa for their work to give continuity to the fair.
“The production of this smoked cheese that we enjoy here today, both visitors and neighbors, has a lot of history and effort behind it, with artisanal processes that were transmitted from generation to generation and that we have to thank the cheese factories,” said the subdelegate, referring to the evolution of the small cattle farms existing in the area to the creation of this artisanal cheese industry, recognized today with the Protected Designation of Origin.
Isabel Rodríguez asserted that “this transformation is an example of vision and development of the livestock sector, which was able to convert small farms at the family level to an economic network of great reach and possibilities through a unique product, this cheese so characteristic and unparalleled”. He also stressed “the recognition on behalf of the Government of Spain one more year, for representing everything that is being promoted at the state level in the sector: modernization, environmental sustainability, economic promotion and gastronomic quality”.
In this XXVIII Cheese Fair, the promoters and organizers of the event combined the exhibition and #traditional sale of the cheeses with tastings of the product and pairing of Galician wines, musical performances and concerts, cooking workshops for girls and boys, and also a MTB route organized by the Terra Chá Cycling Club.
