The delegate of the Government in Cantabria, Ainoa Quiñones, has been appointed this Saturday cofrade of merit of the Confradía de la Anchoa de Cantabria during the celebration of the XXVI edition of the Grand Cabildo.
Quiñones has thanked this recognition and is committed to “continuing to be an ambassador of this gastronomic product that has already become universal and that bears the name of Santoña and Cantabria for the world”.
The delegate has praised the work of claiming and defending the “unparalleled” quality of the anchovy of Cantabria carried out by the Confradía throughout the year and especially these days, during the celebration of the Anchovy Fair, days in which cantabrians and visitors from other points of Spain fill the streets of Santoña.
Quiñones has been named Confrade de Mérito along with other institutional, political and social representatives of Cantabria in an event held at the Liceo Theater and in which the synchronized ex-swimmer Gemma Mengual and the Spanish international handball player Álex Dujshebaev have been named Confrades of Honor.
After her appointment, the delegate of the Government of Spain in Cantabria has valued “the effort, work and delicacy” of all those who participate in the elaboration of “one of the best delicacies of Spanish gastronomy”, such as fishermen’s confradies, canning industries and all workers in the sector, among which she has highlighted anchovy sachets.
“Anchovy represents the strength of the Cantabrian Sea, the courage of the fishermen or the sacrifice of the rederas and the women who make the anchovy with care, care, tenderness and love to give us the best product of the sea. And it also represents all those women and men who are part of that centuries-old process of elaboration turned into art,” he said.
Finally, Quiñones stressed that “anchovy is the best reflection of what is Cantabria, of what are the Cantabrians and Cantabrians, who mix in anchovy crafts, tradition, culture and love for the sea”. “All this is the fruit of a hardworking, honest and dedicated people, of women and men linked to the sea, to the Cantabrian, so that Cantabria gives the best of itself to the world,” he concluded.
