The delegate of the Government in Cantabria, Ainoa Quiñones, has claimed that the “work well done” of the entire canning sector has made that “anchovy is already a universal product, which has crossed borders, and which carries the name of Santoña and Cantabria throughout the world”.
Quiñones said so this Friday at the opening of the twenty-fourth edition of the Anchovy Fair in Santoña in which he participated along with the president of Cantabria, Miguel Ángel Revilla; the councilor for Rural Development, Livestock, Fisheries, Food and Environment, Guillermo Blanco; and the mayor of Santoña, Sergio Abascal, among others.
The delegate of the Government has extolled that this Anchovy Fair “has been paying tribute for 24 years, showing off, breastfeeding and showing the pride of an entire people for a product such as anchovy that is already universal”.
“Santoñeses, Santoñesas, feel the satisfaction of the work well done, of the liturgy that carries the elaboration of these anchovies carrying the name of Santoña and Cantabria around the world and placing us on the map among the best gastronomies,” he added.
In addition, the delegate has emphasized that “none of this would be possible without effort, work and delicacy” all those who participate in the elaboration of “one of the best delicacies of Spanish gastronomy”, such as fishermen’s brotherhoods, canning industries and all workers in the sector, among which she has highlighted anchovy sachets.
“Anchovy represents the strength of the Cantabrian Sea, the courage of the fishermen or the sacrifice of the rederas and the women who make the anchovy with care, care, tenderness and love to give us the best product of the sea. And it also represents all those women and men who are part of that centuries-old process of elaboration turned into art,” he said.
Quiñones has encouraged all Cantabrians and those who are visiting Cantabria between this Friday and Sunday, April 30, to visit the Anchovy Fair to “appreciate even more this magnificent product that comes from the sea but is improved in your hands until you achieve excellence in the taste, in the texture, of a magnificent product”.
“The anchovy is the best reflection of what is Cantabria, of what are the Cantabrians and Cantabrians, who mix in the anchovy crafts, tradition, culture and love for the sea. All this is the result of a hardworking, honest and dedicated people, of women and men linked to the sea, to the Cantabrian, so that Cantabria gives the best of itself to the world,” he said.
The delegate of the Government will be appointed this Saturday cofrade of merit in the XXVI edition of the Grand Cabildo of the Cofradía de la Anchoa de Cantabria, in the ceremony that will be held at the Liceo Theater and in which the synchronized ex-swimmer Gemma Mengual and the Spanish international handball player Álex Dujshebaev will be named Cofrades of Honor.
