The subdelegate of the Government in Lugo, Isabel Rodríguez, participated in the new edition of the traditional Fair of the Capón de Vilalba congratulating the breeders one more year for continuing to offer a product of extraordinary quality and keeping the tradition alive.
The deputy delegate, accompanied by the mayor of the municipality, Marta Ronco; the journalist, Alfonso Hermida; the provincial deputy, Xose María Arias, and other authorities, attended this inaugural day that received 300 capons and 37 breeders, which draws on the horizon a commitment to continue maintaining a traditional work that sees its work increased for the Christmas holidays. “This year, it is again demonstrated that the villa is committed to keeping traditions alive and finding a generational relief, following the chip of a product cared for with affection and in a natural way”
Thus, Isabel Rodríguez thanked the work of these workers and especially the workers with the breeding of the capones throughout the year, since they are the main maintainers of this tradition, symbol of the identity of the gastronomic history of Chairega. “I appreciate the effort made by the women of the area especially, because thanks to you we can maintain this custom that we continue to celebrate today”
The subdelegate presented the award for the best pair to Milagros Lozano and took the opportunity to thank the city council for the organization of this party that exemplifies and serves as a sample of the work carried out by producers in the province throughout the year and that is endorsed by the Protected Geographical Indication.
